## Baked Beans ``` 1 pound dried small white beans such as navy beans Kosher salt Freshly ground black pepper 1 yellow onion 1 carrot, halved 2 cloves garlic 2 sprigs of a woodsy herb (such as rosemary, sage, and/or thyme) 1 bay leaf 1/2 cup dark molasses (not blackstrap) 2 teaspoons Dijon or brown mustard 1/2 pound slab bacon, cut into 1/2-inch chunks Apple cider vinegar, to taste (optional) Last attempt: soak: 12h cold, 1/2T salt cook: 7.5 hrs, 250*F, water added 4 times. 3 fingers of salt added. reheat next day for an hour in 200-400*F oven, ended up too mushy, salt level good and undetectable try shorter soak next time, 4-6 hr. ```
